This recipe is inspired from a recipe in the book called “Cibalikapi”; published by the owner of one of our favourite taverna in Istanbul (the English version of the book you can find here, in case you are interested.)
The original recipe did not have red pepper however I added some. I also steam-cooked the spinach roots instead of boiling them in water as the book advices.
We really liked this mezze! Worth trying the day you don’t know what to do with the small amount of spinach roots you have at hand (you don’t throw them away, do you? :p) If you have a lot of spinach roots, check this recipe out for a full dish!
Ingredients (Serves 2 – 3)
The roots of two bundles of spinach, washed very wel and the head parts are cleaned

1 dessert spoon of soy sauce
2 - 3 spoons of lemon juice (optional to your tasting)
2 - 3 spoons of lemon juice (optional to your tasting)
1 clove of garlic, crushed or chopped fine – you decide
Half of a red pepper, chopped fine (optional)
Method:
- Steam-cook the spinach roots (or boil them in water)
- Mix the soy sauce, the lemon juice, the garlic and the red pepper into a salad dressing.
- Take the spinach roots on the plate and pour the dressing over.
