PASTA IN TOMATO AND PARSLEY SAUCE

That’s Turkish grandma style pasta for you! It is really delicious!

I have to tell you this: in Turkey we usually consume pasta with a dressing we make of strained yoghurt mixed with a few cloves of crushed garlic (unless the pasta is with cheese of course)! In Rome, I asked the restaurant if they had any yoghurt in their kitchen (I had ordered Arabbiatta!), but the waiters was quite in shock :) My husband who got used to this Turkish habit and who eats his pasta in tomato dressing with yoghurt sauce still tells it to this day how funny the situation was! Yes, I really like my pasta that way! :)

You may notice that I talk about butter in the recipe; I think pasta cooked with butter is really delicious! That’s also quite grandma style of cooking pasta here, needless to say!

Ingredients (Serves 2)
200 gr farfalle tonde
1 small green pepper, chopped fine
1 – 2 tomatoes, pureed in the food processor
A handful of parsley, chopped fine
1 spoon of butter + 1 drop of olive oil (alternatively, you can use 2 spoons of olive oil)
Water to boil the pasta
Salt 

Method:
  1. Boil the pasta by follow ing the instructions on the package and drain.
  2. Saute the peppers in the butter for one or two minutes.
  3. Add the tomato puree and salt; cook on low fire until the tomato sauce becomes darker in colour and thicker. When the sauce is ready, turn off the fire.
  4. Add the parsley into the sauce and mix.
  5. Add the pasta into the sauce, mix and serve!
