ALI NAZIK KEBAB WITH COURGETTE

Normally Ali Nazik kebab is made with eggplant puree; but this recipe replaces the eggplant with courgette and changes the spicing a bit. I can say that it is also quite successful. In one of my previous posts I have already told you guys that courgette is not my favourite thing in the world, but I think this dish will be serves quite often in my kitchen from now on! It is quite easy to make! You will have something nice on the table without much effort!

Ingredients (serves 2 – 3)

4 courgettes, rasped roughly

200 grams of meat (cubed) or minced meat
2 – 3 green peppers, cut fine

2 small tomatoes, peeled and cubed
3 spoons of olive oil
100 grams of butter
Grounded red pepper
Cumin
Salt
200 grams of strained yoghurt mixed with garlic and salt to your taste

Method:

  1. Melt the butter and add a drop of olive oil to it. Let the meat be cooked in it till it soaks the water it released.
  2. Add the peppers, sauté for one or two minutes.
  3. Add the tomato and add the salt. Cook for about 4 – 5 minutes till the tomatoes are cooked. Add the cumin, grounded red pepper and salt to your liking.
  4. Heat the olive oil in a pan and sauté the courgettes here till they are soft. Add salt to your liking.
  5. Time to serve: put the courgettes on your plate. Put the yoghurt with garlic on top. And then add the meat on top of it. Enjoy!!

KEBAB IN THE OVEN DISH (TEPSI KEBABI)

This one is a success story! If you feel like home made kebab, this one is a perfect recipe for you as it is also quite easy to make!

Ingredients:

1 kg minced meat from calf
1 green pepper, chopped fine
1 red pepper (paprika), chopped fine
1 onion, chopped fine
2 tomatos, in small cubes

2 teeth of garlic, chopped fine
Half the bundle of parsley, chopped fine
Pimento
Pepper
Salt

Method:
  1. Mix all the ingredients and spread it in an oven dish.
  2. Decorate with tomato and pepper.
  3. Cook it in the oven at 180 degrees for about half an hour to forty minutes.

HOLIDAYS IN CUNDA ISLAND

Dear friends,

It has been a long since I have posted here but it was quite a busy summer for me!
During the summer holidays of my husband, we’ve visited the lovely Cunda island, which is located in the northwestern Aegean Sea. The island is linked with a narrow road to Ayvalik, a summer town in Balikesir. 

It is quite a calm place, not like the popular summer resorts like Bodrum and Cesme. We stayed in a fancy little suite villa which we enjoyed very much! (here's the link if you are interested: Cundavilla Suit Hotel) If you go to Cunda to party, you might be disappointed. If you go there to enjoy the cold sea and the food, then you will definitely like Cunda! To be more specific, Cunda is a place for you if you like Aegean cuisine (this is the cuisine that you can find in Greece, in the Greek islands as well as in the western parts of Turkey) and cold sea. And raki and fish :)

We tried to dine (and have lunch too) at different restaurants all the time in order to have a proper idea of the culinary tradition in the island. If you like mezzes, Cunda island is a place to be! I think the restaurants have a standard in taste and in quality. Except for one particular restaurant, the prices are also quite okay. As for the portions are concerned, a couple of restaurants failed in my eyes but still it is not too bad. All in all, everything we ate in Cunda was extremely tasty!
